Noodles: Dandan noodles are deliberately a little chewy, so the ratio of the flour and water is about 1 : 0.4. Mix the flour, salt, and water together, make sure there is no dry ingredients left in the bowl. Cover it and let it rest for 20 min. Divide the dough into three pieces, take one piece, press down on the dough to roughly flatten it.
Reserve about a cup of the cooking water, then drain. Add 1/3 cup of the cooking water to the tofu skillet, and scrape up the browned bits from the bottom. Add the sauce and just bring to a simmer.
